Ingredients ¾ cup applesauce ½ cup almond or peanut butter 2 eggs ¼ cup molasses 3 cups regular rolled oats ½ cup whole wheat flour ¼ cup toasted wheat germ 1½ tsp. ground cinnamon ½ tsp. ground allspice ½ cup golden raisins or sweetened dried cranberries ½ cup snipped dried apricots Directions Preheat oven to 350°F. Line a large cookie sheet with parchment paper. In a medium bowl stir together applesauce, almond butter, eggs, and molasses. In a large bowl stir together oats, flour, wheat germ, cinnamon, 1 tsp. kosher salt, and the alllspice. Add to egg mixture; beat with a mixer on medium until combined. Stir in dried fruit. Let stand 10 minutes. (Dough will be thick.) Scoop 12 mounds of dough (about 1/4 cup each) and place 3 inches apart on prepared cookie sheet. Flatten each mound to a 3-inch round. Bake until surface of cookies is dry and edges are set, 12 to 15 minutes. Cool on cookie sheet on a wire rack 5 minutes. Remove and cool completely. To store, layer cookies between sheets of waxed paper in an airtight container. Cover and chill up to 3 days or freeze up to 1 month. Thaw at room temperature before eating.
